Aloo bhujia is the king of Indian snacks. The thin crispy-noodle like bhujias made with potatoes and basan flour, are ideal for all-seasons. Plus, you can pair them up with rice and curd, or make a sandwich using some mayonnaise.  

Ingredients
3 potatoes
2 cups basan flour
½ tsp garam masala
½ tsp chili powder
¼ tsp asafoetida
2 tsp dried mint powder
½ tsp chaat masala
Salt as required
Oil as required

Preparation
Boil the potatoes
Peel and grate them into a bowl
Add garam masala, chili powder, asafoetida, mint powder and salt to the potatoes
Add gram flour to it and mix well
Knead them well to make a dough
Load this dough into a chakli press, sev maker mold or an idiyappam press
Heat oil in a pan
Press strips of dough directly into the oil
Deep fry till they turn golden
Drain them on tissue papers
Crush them lightly to make them into small pieces
Sprinkle chaat masala, mint powder and serve
