There's always more to come when it comes to this steamed wonder from Kerala. Puttu seems to be an evolving food here, for it has started to appear in myriad of flavours. For now, let's enjoy this simple, easy wheat puttu.

Ingredients
2 cups wheat flour
1 cup coconut grated
Salt, as required
Water, as required

Preparation
Sprinkle some salted water on the wheat flour and mix well with your fingers
Sprinkle some water and mash the puttupodi
Place a layer of the coconut at the bottom of the vessel followed by a portion of the puttupodi
Press gently and repeat the process till the vessel is full with a layer of coconut at the top
Steam cook
Push it out and allow it to cool
Transfer the cooked puttu to a serving plate and serve hot
