The snickerdoodle cookies are as fascinating as they sound. Put in a little work, for the result is very rewarding!

Ingredients
2 ¾ cups white flour
1 tsp salt
2 tsp baking powder
1 cup butter, salt-less
1 ½ cups sugar
2 large eggs
2 tsp vanilla essence

For the coating

1/3 cups sugar
2 tsp cinnamon, powdered

Preparation
Combine white flour, baking powder and salt
Beat the sugar and butter in a bowl for about 3 minutes
Add the eggs one by one and keep beating
Now add vanilla essence
Fold in the white flour and beat well to smooth dough
If you find it too smooth, refrigerate for a while and when stiff enough, roll out small balls of the dough
Pre heat oven to 400—¦F
Place the baking rack in the middle of the oven
Take two baking sheets and place parchment papers over them
Roll out small balls of the dough
Combine the sugar and cinnamon powder for the coating in a shallow vessel
Now roll over the dough balls in the sugar €“ cinnamon mix and arrange at 2 inch spacing on the parchment paper
Use the bottom of a glass to slightly flatten the dough balls
Bake for 8-10 minutes till the edges turn crisp and light golden brown
Transfer to wire rack, allow cooling and storing in air tight jars
