Seafood casserole

A baked savoury dish that has layers of veggies, fish, potatoes, topped with grated cheese, the casserole is a delight to savour when you want to whip up something good and tasty.
Ingredients
3 tbsp olive oil
1 large onion finely sliced
4 carrots diced
¾ cup zucchini diced
2 celery stalks thinly sliced
Salt to sufficient quantity
tbsp maida
¼ cup fish stock
1 cup cream
Salt and black pepper powder to sufficient quantity
½ kg thick-skinned fish, cleaned, diced and cooked
½ kg prawns, cooked after cleaning and removing shell and vein
3 potatoes skinned, boiled and mashed
Salt and black pepper powder to sufficient quantity
¾ cup bread powder
¼ cup cheese grated
A little butter
Preparation
Preheat oven to 350 degree F
Heat olive oil in a pan. Add the onion, carrot, celery, zucchini and enough salt, and mix well. Saute well until the vegetables get cooked
Sprinkle maida over it
Pour the fish stock and boil in low flame. Make sure it does not get very dry. It has to remain a little moist
Add cream to it slowly. Add sufficient salt and black pepper powder and mix well. Transfer this mixture to a Pyrex dish
Add the cooked fish and prawns to this and mix well
Add salt and pepper to the mashed potatoes and spread on top
Mix bread powder and cheese and spread over the potatoes. Drop some butter here and there. Place it in the heated oven and bake
Bake it until the surface becomes golden in color
