A sago potato pancake, the sabudana thalipeeth is a Maharashtrian dish prepared during Dusshera. During the Navratri fasting, this healthy food is a great addition.

3 medium sized potatoes
½ cup peanuts roasted and crushed coarsely
3 green chillies
Salt, as required
1 tsp cumin seeds
1 tbsp chopped coriander leaves
1 tsp lime juice
Preparation
Wash and rinse the sago at least twice and soak in water for two hours

While the sago is soaking, boil the potatoes, peel and mash well
In a mixing bowl, add the drained sago and coarsely powdered peanuts, mashed potatoes, finely chopped green chillies, coriander leaves, cumin seeds, salt, lemon juice and mix well (can add a teaspoon of rice flour to bind the mixture)
Take a greased plantain leaf or a zipper cover, make a lemon sized ball out of the dough and place it in the middle of the leaf and using wet hands, press it to make a thick circle
Make a small hole with your finger tip in the middle and add some ghee in the hole and also around it.
Then flip it and allow to cook till they are golden brown
Repeat the same method for the rest of the dough
The crispy and delicious sabudana thalipeeth is ready to serve
Serve with plane or sweetened curd
