When festivities beckon, it's time to take a spoon and whip some mousse off the plate! Pineapple works great as an alternative to the traditional chocolate mousse—smooth and the deliciously squishy.

Ingredients
1.  1 1/2 cups cornflakes broken down with fingers
1/2 cup butter
1/2 cup sugar


2.  100g pineapple finely cut
1 dsp sugar


3.  350g pineapple sliced 


4.  3 egg yolks 
75g sugar powdered


5.  2 dsp gelatine


6.  3 egg whites
75g sugar powdered


7. 200 ml fresh cream
8.  1 tsp vanilla essence
9.  1 packet jelly crystals

Preparation
Mix all the ingredients under group 1 and coat it evenly on the sides  and bottom of the serving dish
Bake this in an oven preheated to 160 C for 10 minutes
Mix ingredients marked 2 and cook well and allow to cool
Blend pineapple in a mixer
In a deep vessel, mix egg yolk and sugar
Add blended pineapple to this and mix well
Sprinkle gelatine on top and then double boil the mixture until  gelatine dissolves completely
Stir regularly while cooking and allow to cool after gelatine dissolves completely
Mix egg whites well until froth is formed and add sugar slowly while  beating
Add this to pineapple mix and mix well
Add cream and mix well
Add vanilla essence and pour over the baked cornflakes mixture
Arrange sliced pineapple on top and refrigerate
Prepare jelly according to instructions in the packet and pour over
Cool and serve after the jelly sets
