Meat Pathiri

A popular snack in northern Kerala, meat pathiri is dangerously yummy and rich! A staple during the month of Ramadan, it is sometimes the first thing served to break the fast.
Ingredients
For the masala
250gm boneless mutton
250gm onion
A few sprigs of curry leaves
4-5 green chillies
1 tsp coriander powder
1 tsp chilli powder
½ tsp turmeric powder
1 tbsp coriander leaves, chopped
½ tsp ginger paste
½ tsp garlic paste
2 eggs
Salt as required
For the dough
100gm maida
100gm wheat flour
Preparation
In a pressure cooker, put in the meat pieces, coriander powder, chilli powder, turmeric powder, salt and water
Let the meat boil for 15 minutes
In another pan, pour 1 tbsp oil
Add onion, curry leaves, green chillies, ginger paste, garlic paste and coriander leaves. Saute the mix well
Once the meat is cooked, and all the water has dried off, mince it
Now add the minced meat to the onion mix
Add garam masala, and blend well
To make the dough, combine both the flours with salt and required water
Add a little oil to make it a smooth lump of dough
Make small balls out of the dough
Roll out into small rotis
Place 2 tbsp of minced meat mix at the centre along with half an egg
Close with another roti
With a cutter, cut to an even circular shape
Fold and seal the edges well
Fry the stuffed pathiri in oil on both sides until it browns
Beat an egg in a vessel
Dip the fried pathiri in it
Smear a little ghee in a pan
Fry the pathiri, adding more ghee if necessary
Sprinkle some sugar if you like it to be slightly sweet
