That streak of citrus in your perfectly home made cookies—the lemon princess cookies, that are in a class of their own. Add a bit of that zest to your baking!

Ingredients
2 cups white flour
1 tsp baking soda
½ tsp salt
1 cup butter, softened
1 ½ cups sugar
2 eggs
¼ cups lemon juice
Lemon peel of one lemon, scraped
½ tsp vanilla essence

Preparation
Pre heat oven to 175—¦ C.
Combine the white flour, baking soda and salt in a bowl.
Beat the butter and sugar in a large bowl using an electric mixer for about five minutes till the mix turns very smooth.
Add th eggs one after the other and keep beating.
Add the lemon juice, lemon peel and vanilla essence.
Cool in the refrigerator for half and hour.
Pat out cookies in the shape of your liking, each one the size of how much 1 ½ tsp dough makes on the cookie sheet.
When the cookies are set and their sides turn brown after about 8 minutes of baking, cool for a minute outside the oven and then place on the cake rack.
Serve once they are baked and cooled off.
