Ever read a love letter that made your heart bouncing with joy? Well, this love letter we have will excite not just your hearts, but your tummy also. Also known as Madakku san, love letters are basically coconut-filled crepes that will surely make your evening snack-time sweet and lovely.

Madakku San is a traditional south Indian evening snack, which is a distant relative of the Serabi pancakes. They are also called Mutta Kuzhalappam and Eylanchi across various parts of Kerala. A spicy variant of the same is called Thattipparathi. This super-simple rolled up pancakes are made using maida and eggs.

Love letters are sometimes sent with chocolates or candies to make the moment sweeter. But our love letter itself is sweet!

Ingredients
For batter
2 cups of all-purpose flour or maida
2 cups of milk/water
1 egg
1 tbsp sugar
Salt as required
For the filling
1 cup grated coconut
½ tsp cardamom powder
1 tbsp sugar

Preparation
Mix all the ingredients for the filling and keep it aside
Pour enough milk or water to the maida and crack the egg to it
Beat it well to make a loose batter
Heat a pan and pour a ladle full of batter on it. Spread it in a circle to make it thin and round
When one side is cooked, flip the pancake to cook the other side
When the sides turn golden, remove the pancake and place it on a plate
Spread two tbsp filling on top of it
Roll the pancakes slowly and gently press the outer tip to seal them
Your love letters are ready to be savored.
