Broken wheat payasam aka gothambu payasam- a Palakkadan favorite

Payasam is a culinary delight we cannot let stay away from our platter during any festival meal. During Mandala Kalam, the two-month long auspicious pilgrim season, we are bound to make many varieties of payasam for our friends and family who may drop in any time. Gothambu payasam is an easy to go option to treat an unexpected guest. It takes just above 30-minutes to make and it won't leave you many greasy pans and vessels in the sink to clean up afterwards. So what are you waiting for?

Ingredients
1 cup broken wheat
1 cup jaggery syrup
2 cups of milk
1 cup thick coconut milk
3 tsp ghee
4 cups of water
½ tsp cardamom powder
1 tbsp coconut pieces
1 tbsp cashew nuts

Preparation
Heat 1 tsp ghee in a pressure cooker
Add broken wheat and roast for 2 minutes
Add water water and pressure cook for 4 whistles in low flame
Meanwhile, heat 1 tsp ghee on a pan and fry coconut pieces and cashew nuts separately
When pressure releases, open the cooker and fluff the wheat
Add jaggery syrup and cook it in simmer
Mash up the wheat a bit
Add milk and stir well
Cook for 10 minutes in low flame
Add coconut milk and let it come to a boil
Switch off the stove and add ghee
Garnish with fried coconut and cashew nuts before serving
