Italian al-pesto with no spaghetti! Yes, you heard it right. This recipe would help you make the authentic Italian al-pesto without using any flour based spaghetti pasta. Instead of pasta, thin strips of golden zucchini, carrots and tender coconut are covered in the pesto sauce. The strips are then covered in raw cashew paste cheese making it every bit of a healthy food.

Ingredients
For pesto sauce

3 tbsp olive oil
3 tbsp pine nuts
1 cup basil leaves

For the spaghetti

1 golden zucchini
1 carrot
Flesh of half a tender coconut
Few lemons
2 tbsp oregano
½ cup cashew paste cheese

Preparation
Mix all the ingredients for the pesto sauce and blend them to a fine paste
Add salt as required and set aside
Cut the edges of zucchini and carrot
Make them into thing spaghetti-like strips with the help of a spiralizer or using a knife
Slice the tender coconut flesh into thin strips
Add pesto sauce and cashew paste to the raw spaghetti and mix well
Add some lemon juice and mix again
Garnish with zucchini, carrot and tomato
Season with oregano and serve
