Ingredients
For chicken korma
½ kg chicken
½ tsp turmeric powder
1 tsp pepper powder
2 tbsp yoghurt
1 tsp garam masala
1 big onion
1 big piece ginger
4 cloves garlic
2 green chillies
1 potato
1 tbsp coriander powder
¼ tsp chilli powder
1 tsp fennel seeds
¼ grated coconut
Curry leaves as required
Coriander leaves
8-10 cashews
Salt as required
Water as required
2 tbsp coconut oil
For appam
1 ½ cup raw rice
1 tbsp urad dal
¾ cup grated coconut
2 tsp boiled rice
A pinch of cumin
1 tsp yeast
Coconut water as required
1 tbsp sugar / as per taste
Salt as required
Preparation
Marinate the chicken pieces with salt, turmeric powder, pepper powder and yoghurt
Keep them aside for at least half an hour; the yoghurt would make the chicken pieces soft and tender
Heat 2 tbsp coconut oil and sauté the onions
Add the crushed ginger and garlic when the onions are translucent
Sauté until the raw smell of these ingredients are gone
Now add the green chillies and some curry leaves
Sauté well
Add salt as required
Add the marinated chicken pieces and potato
Mix and cook on low flame with the lid on
Cook for at least 20-30 minutes
Stir occasionally; add water only if required
Meanwhile, grind grated coconut, fennel, coriander powder and chilli powder with some water
Add the cashews and the coconut paste when the chicken pieces are almost done
Pour some water as well
Sprinkle pepper powder when the gravy begins to bubble
Add chopped coriander leaves and curry leaves
Put on the lid and turn off the flame
Tasty chicken korma is ready.
To prepare appam, wash the raw rice and urad dal and soak them for 4 hours
Grind them along with grated coconut, cumin and boiled rice
Add the coconut water and blend again
Sprinkle some sugar in a vessel
Pour the batter into this vessel
Into it add a pinch of salt and yeast
Mix well and keep aside for the batter to rise
You could also use baking soda or some dosa batter instead of yeast
Stir well after an hour
After 6 hours, the appam batter would rise nicely
Pour a ladle full of batter into hot greased pan
