Crispy potato basket is a popular North Indian dish. Spicy chaat mixtures, varieties of chutney, and yogurt are filled in the potato baskets. These potato baskets are explosion of flavours.
Ingredients
2 potatoes (grated)
2 tsp corn flour
1 tsp salt
1 potato (boiled and cubed)
1 onion (chopped)
100 gm green gram (cooked)
4 tsp tomatoes (chopped)
1/2 cup coriander chutney (made by grinding a bit of coconut, green chillies, coriander leaves, salt and a squeeze of lemon)
4 tsp yogurt
100 gm sev puri
1/4 cup tamarind chutney (made by boiling 1 cup tamarind water, 1 jaggery, 4 dates, and salt as required. Pass this boiled mixture through a sieve)
1/4 tsp chaat masala
2 tbsp pomegranate
Preparation
Wash the grated potato in cold water
Add corn flour and salt
Mix well
Paste this mixture inside a steel sieve
Heat oil in a pan
Dip the steel sieve into hot oil and fry the potato mixture until golden brown
Separate the fried potato mixture from the steel sieve when it is cold
Fill the fried potato baskets with 1 tsp boiled potato cubes, 1 tsp green gram, 1/2 tsp chopped onion, 1 tsp chopped tomatoes,1 tsp coriander chutney, 1 tsp yogurt, 1 tsp tamarind chutney, 1 tsp sev puri, a pinch of chaat masala, 1 tsp pomegranate
Grains or fruits as per preference could be included as the filling.
