The Christmas and New Year celebrations are made extra special by toasting wine to each other's health and happiness. Pineapple wine has the natural colour and sweetness of the fruit. This would make the perfect drink for the festive occasion.
Ingredients
1 kg pineapple skin
4 litres water
2 kg sugar
2 egg whites
6 cloves
1 tsp yeast
Preparation
Clean the pineapple skin and chop it thinly
In a vessel, add water and chopped pineapple skin
Boil it for at least 15 minutes
In a bowl, add 2 cups of water, yeast and 2 table spoons of sugar
Mix well and keep it aside for 30 minutes
When the yeast ferments add this mixture into the boiled pineapple skin
Add the egg whites, crushed cloves and sugar into it
Stir well
Pour this pineapple mixture into a mud jar and seal it using a piece of clean cloth
Place the jar in a warm area
The wine should be stirred everyday using a wooden spoon
After 10 days, pass the wine through a sieve and squeeze the pineapple peel bits to extract maximum flavour
Pour the juice back into the mud jar and store it for 10 more days
When the wine is ready, transfer it to glass bottles without getting the residue mixed with it
The pineapple wine could be used 10 days after storing it in glass bottles.
