Thayir sadam is soul food. The kind of preparation that one can have any given day, for it's nutritional, tasty and easy to make. With added seasoning, this preparation is just the right thing for Indian summers

Ingredients
2 cups small grain rice, boiled 
1/2 cup curd (not sour)
1 cup milk
1 dsp butter
1 tsp asafoetida
1 dsp oil (any oil other than coconut oil)
1 tsp mustard seeds
1/2 tsp fenugreek seeds
2-3 green chillies chopped fine
1 tsp ginger, sliced fine
2 dry red chillies
1 sprig coriander leaves to garnish
1 tbsp shallots, chopped fine
Salt as required

Preparation
Take the prepared rice in a bowl. While it's still hot, mix in the milk along with salt, asafoetida powder and butter
Let it rest. In the meantime, prepare the seasoning
In a wok, pour the oil, and let the mustard seeds splutter
Add to it, fenugreek seeds, green chillies, ginger, dried red chillies shallots and curry leaves
When the rice has completely cooled down, add curd to it, and mix well
To this, add the seasoning
Garnish with coriander leaves
Thayir Sadam is ready

Notes
Squeeze in the juice of half a lemon if necessary.
