The spicy egg roast is an accompaniment never to be missed; it usually pairs up with Appam or idiyappam and renders the right flavour for the main course.

Ingredients
4 duck eggs, boiled
3 dsp coconut oil
1 cup big onion, sliced round and drained after dipping in salt solution
1/2 cup tomatoes, diced
1 tsp red chilli powder
1/4 tsp turmeric powder
1 tsp garam masala
1 tsp coriander powder
A sprig of curry leaves 
Salt to taste

Preparation
Heat oil in a wok and sauté onion
Add tomatoes when the onion turns brown
When water starts draining from tomatoes, add coriander, chilli and turmeric powders, garam masala and salt
When all the ingredients have cooked well, add curry leaves
After mixing in the curry leaves, add enough water to make the gravy
Add shelled eggs to the gravy and mix well
Garnish with coriander leaves if you like it that way, and it's ready to be served!
