This is the season when the tamarind trees are full of ripe fruit that wait to be plucked. Tamarinds can be easily preserved as delicious jams. Check out this easy recipe.

Ingredients
3 kg tamarind
3 pieces jaggery
1 piece ginger
1 tbsp pepper powder

Preparation
Remove the shells of the tamarind and soak the flesh in water
Squeeze the tamarind into coarse pulp
Into a bowl add the tamarind pulp, jaggery shavings, finely chopped ginger and pepper powder
Mix well
Cook this on stove top for at least 20 minutes or until the jam thickens
The water content in the tamarind mixture should be evaporated completely
Store in glass jars after the jam has cooled down.
