Milky and pristine, the pedas are the life of an Indian festival. Taking the centre stage, they grab everyone's attention.

Ingredients
1 litre milk
½ cup sugar
¼ tsp cardamom powder
1 pinch saffron made into a paste with a little milk
Pistachios, chopped, for garnishing

Preparation
In a saucepan, boil the milk and leave it on low flame till it thickens, stirring all the while
Once the milk thickens, add the sugar and mix well
Boil it again as the milk is likely to loosen a little with the addition of sugar
When thick enough, add the saffron paste and the cardamom powder for flavour
Keep stirring till the mixture comes off from the sides of the pan. Remove from the fire
Smoothen the mixture with the back of a spoon and shape it into small pedas
Garnish with chopped pistachios
