In recent years, there has been a notable shift towards plant-based diets as individuals become increasingly conscious of their health. A significant challenge for those transitioning to a vegetarian lifestyle is finding satisfying substitutes for traditional non-vegetarian dishes. Even while dining out, their options are limited compared to a variety of non-vegetarian items. However, the culinary world has risen to the occasion, presenting a delightful array of vegetarian alternatives that not only mimic the flavours and textures of their meaty counterparts but often surpass them. Soya chunks
Soya chunks, made from dried soya beans and defatted soya flour, are high in protein. Their taste and texture can mimic the chewiness of chicken or goat meat. Soya chunks are often more budget-friendly compared to meat varieties. They are typically low in fat and cholesterol, making them a healthier alternative to some meat options.

Mushrooms
Though belonging to the vegetable species, mushrooms are a fantastic and versatile ingredient that can be used as a substitute for meat in various dishes. They are used for burgers and sandwiches instead of beef and chicken. They have a robust texture and hence become tastier when marinated.

Green gram
Green gram, also known as mung beans, is a versatile legume that can be an excellent replacement for non-vegetarian items, especially beef, in various dishes. It is even called 'poor man's meat' by many. They can be cooked easily and delicious items like green gram meatballs, hearty curry, and green gram vegetable skewers etc taste very much like meat dishes.

Eggplant
The unique texture and ability to absorb flavours make it a popular choice for creating hearty, satisfying meals for vegetarians and those looking to reduce their meat intake. It can be a fantastic substitute for meat in various dishes. These days, in many North Indian weddings and celebrations, items prepared out of eggplant are served along with non-veg dishes for intake by vegetarians. For instance, the eggplant fry provides a satisfying crunch reminiscent of fish fry, a popular dish of Keralites.

Paneer
Paneer is often referred to as the ‘vegetarian’s meat’. This versatile dairy product has gained popularity due to its unique texture, mild flavor, and high protein and nutrient content that rivals meat products. A variety of dishes, with a similar taste to non-veg items, can be prepared with paneer, thanks to its firm and crumbly texture that can mimic the mouthfeel of certain meats.
