Green spinach or 'palak' is a favourite in many Indian cuisines. Loaded with great nutritional properties, this colourful and creamy 'aloo palak' has the goodness of both palak and potatoes. Try out this easy recipe of delicious aloo palak which tastes amazing with roti, chapathi, or basmati rice.
Ingredients
2 cups palak
4-5 potatoes (cut into pieces and boiled with some salt)
2 onions
2 cloves garlic
1 green chilli
1 tomato
1 cup water
2 tbsp oil
Cardamom, cinnamon, cloves and star anise as required
1 tbsp chilli powder
½ tbsp coriander powder
¼ tbsp turmeric powder
¼ tbsp garam masala
½ tsp asafetida powder
1 tsp cumin
Salt as required
Preparation
Cook the palak with some water in a vessel
Grind the cooked palak into paste and keep it aside
In another pan heat some oil. Add cumin and asafetida
Roast them until they turn fragrant
Now add the boiled potatoes and roast them well. Keep them aside
In a thick bottomed pan heat oil and roast cardamom, cinnamon, cloves and star anise until they are fragrant
Into it add the onions and garlic. Sauté well
Add chili powder, coriander powder, turmeric powder and garam masala
Sauté well until the raw smell of the powders are gone
Add the diced tomatoes and mix well
Now add the palak paste
Cook until the tomatoes are nice and mushy
Into it add the cooked potatoes and green chillies as well
Give everything a good mix
Garnish with chopped coriander leaves if required.
