Try traditional Kerala duck curry this Easter

Easter is not complete without a sumptuous meal with a lot of non-vegetarian dishes. Every region has its own favourite meat on Easter. In Kerala, most of the families use duck and fish as the main ingredient. Easter is also about tradition and memories. Sophy Kuriakose, a food vlogger from Kottayam, has specially devised a recipe of traditional duck curry for us. She has recently received YouTube silver play button award for her cooking vlog Cook with Sophy. Try this special recipe for this Easter.

Ingredients
1 kg duck
2 medium onions
25 shallots
5 green chillies
2 tbsp ginger
15 garlic cloves
1 tsp pepper powder
2 tsp Kashmiri chilli powder
1 tsp fennel seeds
2 tsp garam masala
2 tbsp crushed pepper
2 tbsp coriander powder
½ tsp turmeric powder
2 tomatoes
Vinegar as needed
Water as required
Oil as required
Salt as needed
Curry leaves
Coconut milk

Preparation
Marinate the duck with vinegar and salt for half an hour. Wash it 8-10 times
Again marinate the duck using turmeric powder, garam masala, chilli powder, pepper powder, vinegar, and salt
Keep it aside for 15 minutes
Transfer the marinated duck into a pressure cooker
Add ginger, curry leaves, garlic, and green chillies
Add half glass of water and mix it well
Cook it till the fourth whistle
To make masala
Heat oil in a pan and add fennel seeds in it
Add onions, shallots, garlic, ginger, green chilli, and curry leaves
Add salt
Keep it in low flame and add coriander powder, turmeric powder, chilli powder, garam masala.
Sauté well
Add tomatoes and mix it well. Also add crushed pepper
Close the lid of the pan and let it cook for some time in low flame
Add the cooked duck to the pan
