Ingredients
250 gm prawns, cleaned
5 cloves garlic, grated
1-inch piece ginger, grated
1 tsp chilli powder
1/4 tsp turmeric powder
1/4 tsp garam masala
1/4 tsp cumin powder
1 tsp fenugreek (methi) leaves, chopped
2 tbsp curd
Black salt, to taste
Salt, to taste
2 tbsp mustard oil
1 1/2 tsp ghee
1 medium onion, sliced (for garnish)

Preparation
In a bowl, mix the grated garlic, ginger, spices, fenugreek leaves, curd, black salt, regular salt, and mustard oil.
Stir thoroughly to make the marinade.
Add the prawns to the marinade, ensuring they are well-coated.
Set it aside for 30 minutes.
Once marinated, heat ghee in a pan.
Place the prawns in the pan one by one, leaving the rest of the marinade in the bowl.
Fry until the bottom turns light brown, then flip the prawns.
When both sides are fried, remove the prawns from the pan.
Add the leftover marinade to the pan and cook until the raw spice smell dissipates.
Return the fried prawns to the pan, stirring to coat them in the cooked marinade.
Turn off the stove after a minute.
Meanwhile, heat some mustard oil in a separate pan and fry the onion slices until golden.
Plate the prawns and garnish with the fried onions.
Serve with lime wedges for a tangy finish.
