Wholesome ragi kozhukatta: A flavourful, steamed snack

Ingredients
1 cup fine ragi flour
½ cup fine rice flour
2 cups water
A pinch of salt
1 tbsp refined groundnut oil
1 cup grated jaggery
1 cup grated coconut
¼ tsp cardamom powder
Grated coconut and cashews for garnish

Preparation
In a pan, boil 2 cups of water with a pinch of salt and 1 tablespoon of refined groundnut oil
In a mixing bowl, combine 1 cup fine ragi flour and ½ cup fine rice flour
Gradually add the boiled water to the flour mixture, stirring continuously to avoid lumps
Mix thoroughly until a smooth, soft dough forms
In a separate bowl, mix 1 cup grated jaggery, 1 cup grated coconut, and ¼ teaspoon cardamom powder
Divide the previously prepared dough into small, equal-sized balls
Flatten each ball in your palm to form a circular shape
Place a spoonful of the coconut-jaggery filling in the centre
Gently fold the edges of the dough over the filling and roll it into a smooth ball, ensuring the filling is enclosed
Place the kozhukattas in a steamer and steam them for about 15 minutes, or until cooked through
Once steamed, garnish the Ragi Kozhukatta with grated coconut and toasted cashews for added flavour and texture.
