Nadan tharavu curry

Spicy yet mouthwatering duck recipes are the specialty of middle Kerala, especially in the Kuttanadu and adjacent areas. When the Kuttanadu duck roast makes an ideal side dish for lunch, this spicy duck curry would make a perfect breakfast companion. Ideal to go with Kallappam, this traditional duck curry recipe is the best thing you can serve for the Christmas feast.

Ingredients
1 kg duck, peeled and cleaned
1 cup shallots
3 tomatoes sliced
5 green chilies, slit
2 tbsp garlic cloves
2 tbsp sliced ginger
1 cup thick coconut milk
2 tbsp coriander powder
1 tbsp turmeric powder
2 tbsp garam masala
1/2 cup tbsp oil
3 sprig curry leaves

Preparation
Heat oil in a pan
Add shallots, ginger and garlic
Saute it well on medium heat, stirring occasionally
When the shallots turn soft, add the ground masala to it and mix well
Add salt to taste and mix again
Now add the duck pieces to the pan one by one
Mix it well to let the pieces covered in with the masala
Remove it from stove after two minutes
Shift this to a pressure cooker and pour in the coconut milk
Mix the curry well and allow it to cook
Heat oil in another pan
Fry green chilies, curry leaves and tomatoes in it
Fry it until the tomatoes are cooked
Now remove the lid of the pressure cooker
Pour the curry to the fried tomatoes in the pan
Cook on simmer for a few minutes
Your tharavu curry is ready to be served
