Many dishes can be prepared with potatoes, but what about pickles? The vegetable is versatile enough to transform into a yummy pickle as well. The Nepali-style potato pickle, also known as ‘aaloo achar’, is a flavourful and spicy dish that goes well with rice, dal, or flatbreads. A video, recently shared by noted food vlogger Anushka Rawat, in which she details the recipe of the popular, instant pickle from Nepali cuisine had gone viral on social media. Here’s how to make it:

Ingredients
3 to 4 medium-sized potatoes
1 onion
½ piece cucumber
1 ½ tsp chilli flakes
1 ½ tsp freshly powdered pepper
3 tbsp sesame seeds
Lime juice (of a half piece of lemon)
4 tbsp mustard oil
3 to 4 green chillies
1 ½ tsp fenugreek seeds
1 ½ tsp turmeric powder
1 sprig of fresh coriander leaves

Preparation
Finely powder the sesame seeds
Boil the potatoes and slice them into small pieces
Mix the sliced onion pieces and cucumber, cut into small pieces, into this
Add chilli flakes, pepper powder, finely powdered sesame seeds, salt, and coriander leaves into the mixture and blend well
Sprinkle the lime juice over this and keep it aside
Pour mustard oil into a pan and heat it
Add the fenugreek seeds, green chillis, and turmeric powder and stir well
Switch off the flame and add this into the mix prepared earlier and again stir well
Allow the potato pickle to marinate for three to four hours
This helps the flavours to meld
