Soft and flaky porotta is undoubtedly a comfort food for many. The delicious flat bread with its perfect layers, soaked in the spicy beef gravy, could easily be a match made in culinary heaven. Interestingly, porotta pairs well with beef, chicken, egg or vegetable curries (even sambar or fish curry!). It is easy to prepare restaurant-style layered porotta at home. Here is how to make it at home.
Ingredients
½ egg
1 tbsp sugar
½ cup milk
1 tbsp ghee
1 tsp lemon juice
500 gms all purpose flour
1 tsp baking powder
¾ cup water
Salt as required
2 tbsp oil
Oil-ghee mixture as required (mix 2 tbsp ghee in 4 tbsp oil)
Preparation
Mix egg, sugar, milk, ghee and lemon juice in a bowl
Stir well until the sugar is melted
Add all purpose flour and baking powder
Now add salt water
Knead into soft dough
Sprinkle some all purpose flour on a clean kitchen counter
Transfer the dough onto this; add some vegetable oil
Now knead well for at least 5 minutes or until the dough is soft
Roll the dough into a ball
Pour oil on a clean surface and roll the dough ball in the oil
Make sure that the dough ball gets covered in oil on all sides
Cover this with a wet cloth and keep aside for at least an hour
After an hour, make small balls from it
Pour oil on these balls too
Cover these balls with a wet cloth and keep aside for another half-an-hour
Prep the working surface by rubbing oil
Place a dough ball and press using your fingers
Hold this dough using the four fingers of your right hand on top and four fingers of your left hand beneath it to deftly toss and flip the dough until it is stretched into thin sheet
Smear the oil-ghee mixture on this sheet
Sprinkle some all purpose flour too
Cut the flattened sheet into two pieces
Gently lift a portion to make it into a strip
Make a spiral and then tuck the end underneath it
Press each section using your palms
Do not make them too thin as it wouldn’t form layers
Grease a hot tawa with oil
Place the porotta on it
Sprinkle enough oil before flipping it
Cook on medium flame
After cooking three or four porottas, stack them together
Beat them from the sides to separate the layers
Make sure to beat the porottas while they are still hot
Enjoy the porottas with a generous serving of curries.
