Mini screen actress Anila Sreekumar shares the pretty simple recipe of chicken rice that is delicious and loaded with veggies too.
Ingredients
1 chicken
1 carrot
1 piece cabbage
1 tomato
2 -3 beans
2 onions
5 -6 green chilies
Curry leaves
Coriander leaves
Mint leaves
1 piece ginger
4 garlic cloves
3 -4 shallots
Cinnamon
5 glasses kaima rice
Coconut oil
2 tbsp ghee
Turmeric powder
Meat masala powder
Cloves
Cardamom
Star anise
3 tsp poppy seed powder
Preparation
Wash and cut the chicken into small pieces
Cut the veggies
Crush the green chilies, coriander leaves, mint leaves and curry leaves
Crush ginger, garlic and shallots
Wash and strain the kaima rice
Heat some coconut oil and 2 tsp ghee in a pressure cooker
Sauté crushed ginger, garlic, shallots and cinnamon
Sauté the onions
Now add cabbage, beans, carrot, tomato and salt
Sauté well
Into it add the crushed green chilies, coriander, mint and curry leaves
Now add turmeric powder, meat masala powder, cloves, cardamom, star anise and poppy seed powder (3 tsp)
Mix well
Add the kaima rice and 9 glasses water
Pressure cook until one whistle
Turn off the flame and allow the pressure to release completely
Open the cooker after five minutes
Enjoy delicious chicken rice with raita.
