Chena thandu or yam stem is a locally available ingredient that is known for its incredible health benefits. Check out the very simple recipe of protein rich yam stem and Bengal gram thoran (stir fry) that could be enjoyed with rice.
Ingredients
¼ cup Bengal gram
Salt as required
Yam stem (chena thandu)
¾ cup grated coconut
3 green chilies
¼ tsp turmeric powder
1 tbsp coconut oil
3 garlic cloves
¼ tsp cumin seeds
Curry leaves
1 tsp mustard seeds
Preparation
Soak the Bengal gram for at least 8 hours
Pressure cook the soaked Bengal gram with some salt and water
Crush the grated coconut with cumin seeds, green chilies, garlic cloves and curry leaves
Heat coconut oil in a pan
Splutter the mustard seeds
Add the coconut mixture
Roast for a while
Now add the chopped yam stem
Sauté well
Cook for 2 minutes with the lid on
Finally, add the cooked Bengal gram
Give everything a good mix and the thoran is ready
