Avial is an indispensable part of the traditional Onasadya. As it is loaded with veggies, many often complain that avial cannot be cooked in small portions. Here is how to prepare avial in small amount in a pressure cooker without overcooking it.

Ingredients
2-inch piece of elephant foot yam
¼ part of a plantain
1 small Colocasia
½ carrot
½ drumstick
4 long beans
1 small piece of snake gourd
1 small piece of cucumber
Raw mango as required
3 green chillies
½ tsp turmeric powder
½ tsp chilli powder
1 ½ tbsp coconut oil
2 tbsp water
Salt as required
Curry leaves as required
½ coconut (grated)
½ tsp cumin seeds
2 shallots

Preparation
Wash and cut the vegetables into thin pieces
Soak the yam, Colocasia and plantain pieces in water to remove the stain
Crush the grated coconut with cumin, shallots and a few curry leaves without adding water
Transfer the veggies into a big vessel
Into them add turmeric powder, chilli powder, ½ tbsp coconut oil, 2 tbsp water and salt as required
Mix well using your fingers
Pour some water into the pressure cooker and insert a stand
Place the vessel with the veggies on the stand
Close the lid
Cook until two whistles
Open the lid after the pressure has been completely released
Cook the coconut mixture in a thick-bottomed pan or vessel until the raw taste is gone
Add the cooked veggies
Mix gently without squishing the vegetables
Turn off the flame before sprinkling 1 tbsp fresh coconut oil
Tasty and easy avial is ready.
