One pot dishes are loved by everyone as it makes cooking and cleaning easier. Moreover, this method would help preserve the aroma and flavours of the ingredients. Even though one pot veggie rice is similar to biryani, it doesn’t involve complex processes like keeping it on ‘dum’. This dish could be prepared using non – vegetarian dishes like chicken or prawns too. Here is the recipe.
Ingredients
2 ½ cups basmati rice (soaked for half an hour)
3 tbsp ghee
3 tbsp refined oil
2 onions (finely sliced)
250 gms paneer
½ tsp sajeerakam or small cumin
2 cinnamon/ cardamom/ cloves
1 bay leaf
½ cup carrot
½ cup carrot
½ cup beans
½ cup cauliflower
½ cup green peas
1 tsp chili powder
½ tsp turmeric powder
1 tsp coriander powder
½ tsp garam masala
Coriander leaves
Mint leaves
Salt as required
Preparation
Heat oil and ghee in a bigger vessel or pot
Fry thinly sliced onions
After that, fry the paneer
Set them aside to be used later
Roast the small cumin, cinnamon, cardamom, cloves and bay leaf in the same oil
Add the remaining onion
Saute well
Now add carrot, beans, cauliflower and green peas
Into it add chilli powder, turmeric powder, coriander powder, garam masala and salt as required
Saute well
When the veggies are almost cooked, add the soaked basmati rice
Add salt too
Roast the rice well
Add the fried onions and paneer
Mix well
Pour three and a half cups hot water
Cook on low flame until the water reduces
Finally, garnish with some fried onions, coriander leaves and mint leaves
Cover the pot and wait for 5 minutes before serving
Enjoy the one pot veggie rice with refreshing raita, pickle and papad.
