Ingredients
 2 potatoes
1 carrot
¼ cup fresh green peas 
A small piece of ginger
3 finely chopped green chili 
1 onion
3 tbsp coconut oil 
½ tsp mustard seeds 
1 tbsp urad dal 
½ tsp turmeric
½ tsp garam masala 
¾ cup thick coconut milk
Curry leaves
Salt

Preparation
Boil the potatoes and carrots in a cooker, peel, and mash.
Heat 2 tbsp oil in a bowl and fry the mustard and urad dal. Add ginger and green chilies and fry for 2 seconds.
Then add chopped onion and curry leaves and fry till it turns brown.
Add green peas and mix well. Add boiled potatoes and carrots and mix well.
Add turmeric powder and garam masala, enough salt, and mix well.
Add one cup of water, stir, cover, and cook till the water dries
Once the water is dry, add a little coconut milk and turn off the heat.
Sprinkle a pinch of garam masala on top. You can also drizzle some coconut oil as a finishing touch.
