Swedish apple cake with vanilla and cinnamon

Point to be noted: You don't need baking powder for this cake. If you have a 12-inch mould, a mixing bowl, blender, mixer and lining paper, that's all the tools you'll need to put this cake together.
Ingredients
150 gm butter
3 eggs
210 gm sugar
125 gm maida
2 tsp vanilla sugar
2 big apples (preferably a bit sour and crispy)
2 tsp cinnamon powder
2 tbsp brown sugar
Oven at 180 degree
To make vanilla sugar
Ingredients
200g sugar
1 tsp pure vanilla powder
Mix the two in a blender until the sugar has become a fine powder. Store in an airtight jar.
Preparation
Melt the butter, set it aside for cooling
Prepare the mould and preheat the oven to 180 degrees
Mix maida and vanilla sugar in a small bowl
Mix the brown sugar and cinnamon in a separate small bowl
In a bigger bowl beat the sugar and eggs until it's really fluffy and white (this step is very important as there is no baking powder to help the batter rise)
Add the melted butter to the egg/sugar. Gently mix by folding it in from the sides
Add the maida/vanilla sugar into the batter, by gently folding it in. Little by little. Be gentle and do NOT mix a lot
Stop mixing as soon as the lumps disappear
Pour the batter into the mould
Cut the apples in half and remove the core
Cut the apples into slices of approximately 0.5cm
Gently arrange the apple slices on top of the batter along the edge of the mould moving inward
Sprinkle the cinnamon-brown sugar mix on top of the apples, evenly
Bake the cake in the middle of the over for approximately 35 min
Insert a thin skewer or toothpick to the middle of the cake if it comes out clean the cake is done!
