Coconut beet balls
Ingredients
1 cup grated coconut
½ cup sugar
1 tsp cardamom powder
¼ cup ghee
½ cup milk
2 tbsp beetroot extract

Preparation
Boil milk in a thick bottomed vessel
Add grated coconut when the milk begins to boil
Cook the grated coconut in the milk
Add sugar too
Add beetroot extract and ghee when the mixture begins to thicken
Cook well until it turns the milk reduces
Finally, add the cardamom powder
Mix well
Roll into small balls
Tasty coconut – beet balls are ready!

Carrot burfi
Ingredients

1 cup grated carrot
½ cup sugar
½ cup milk powder
½ cup milk
Nuts
¼ cup ghee

Preparation
Blend the carrot with milk into a smooth puree in a blender or a mixer
Heat ghee in an uruli or a thick bottomed vessel
Add the carrot – milk puree, milk powder and sugar
Mix and stir until the mixture begins to separate from the sides of the vessel
Transfer the barfi into a greased plate or tray
Level the surface using a spatula
Garnish using nuts of your choice
Cut into pieces after it has set.

Roasted dry fruits peda
Ingredients

1 cup milk powder
½ cup sugar
½ cup ghee
¼ cup milk
Dry fruits

Preparation
Mix milk powder, milk and ghee in a bowl
Prepare sugar syrup by boiling sugar with water
Add the milk mixture when the sugar syrup has one string consistency
Mix and stir well
Add ghee and dry fruits when the peda thickens up
Mix well
Cut into small pieces when the peda is set.
