Ingredients
2 tbsp olive oil
1 onion (chopped)
4 cloves garlic (finely chopped)
100 gm carrot (finely chopped)
1 tomato (finely diced)
1 ½ fish head, tail and bones
2 litres water
Salt as required
Black pepper as required
130 gm vermicelli
200 gm prawns
Preparation
Heat olive oil in a pan and sauté onions and garlic
Into it add the carrot and tomato and sauté well
Add the fish head, tail and bones and boil the broth well until the vegetables are nicely cooked and squishy
Add water, salt and black pepper and allow the broth to boil well
Skim the frothy fat from the surface of the simmering broth. This fish stock should be boiled at least for 20 minutes
Crush the vermicelli with your palms and lightly dry roast it until golden. Transfer the roasted vermicelli into a bowl and allow it to cool down
Pass the fish stock through a strainer and boil this again for another10 -12 minutes
After the broth has reduced a bit, add in the prawns and mix well. Into it add the roasted vermicelli as well
Taste for seasoning and simmer for five more minutes or until the vermicelli is cooked
Serve hot with crispy croutons.
