Chicken stew is an anytime dish that is often a comfort food for many in Kerala. Not only does it go well with breads like appam, idiyappam, chapathi and more, many also like to have it just as it is, thanks to its often soupy, creamy goodness and taste. The classic, traditional dish continues to be a hot favourite of the the youngsters too.

Here is how to easily prepare it at home.

Ingredients
1 kg chicken
2 onions
1 tbsp ginger
1 tbsp garlic
5 green chilies
2 medium sized potatoes
1 cup first extract of coconut milk
2 ¼ cups second extract of coconut milk
1 cinnamon stick
4 cloves
2 cardamom pods
2 bay leaves
½ tsp pepper corns
½ tsp garam masala
10 cashews
Curry leaves
Coconut oil
Salt as required

Preparation
Heat coconut oil in a pan
Roast cinnamon, cloves, cardamom, bay leaves and pepper corns
Now add onion, ginger, garlic, green chilies and curry leaves
Sauté well
Add chicken and mix well
When the chicken begins to cook, add 1 tsp pepper powder, two cups second extract of coconut milk and salt
Stir well
Close the lid and cook well
When the chicken is cooked well, stir well and cook on medium flame
Meanwhile, add cashews and the rest of the second extract of coconut milk
After ten minutes, add the potatoes
When the chicken and potatoes are nicely done, add cashew paste, pepper powder and ½ tsp garam masala
Allow the gravy to boil
Add the first extract of coconut milk
Turn off the flame as soon as the stew begins to bubble up
Sprinkle one teaspoon coconut oil as a finishing touch
The gravy will get thicken when the chicken stew cools down a bit.
