It is better to enjoy steamed local snacks instead of fried and unhealthy dishes. Steamed dishes are easy on the stomach and digest easily. Moreover, they are nutritious and prevent obesity. Here is the recipe of wheat -banana- pineapple ilayappam.
Ingredients
1 ½ cups wheat powder
1 cup jaggery
¾ cup chopped pineapple
1 banana
¾ cup grated coconut
1 tsp cardamom powder
¼ tsp salt
¼ tsp baking soda
Preparation
Boil jaggery in 1 cup water
Strain the jaggery syrup
Take finely chopped pineapple, banana, grated coconut and cardamom powder in a thick bottomed vessel
Add half of the jaggery syrup
Mix well
Close the lid and cook for 5 minutes
After the mixture has cooled down a bit, add the remaining jaggery syrup, wheat powder, salt and baking soda
Mix into thick batter
Add some water if required
Soften the plantain leaf by running it over the flame
Now cut the leaf into circles
Grease the softened plantain leaf and place them in an idli steamer
Pour 2 tbsp batter in each leaf
Cook for 15 minutes
Enjoy delicious ilayappam with hot tea.
