Who doesn't love the Gujarati savoury specialty Dhokla? They come tweaked, baked in little muffin moulds, transformed into an all new delicacy!
Ingredients
2 ½ cups gram flour/besan
½ tsp ginger paste
½ tsp green chilli paste
1 tsp curry leaves, chopped
1/2 tsp turmeric powder
1 cup (appox) butter milk
½ tbsp sugar
½ tsp baking powder
1 tsp Eno fruit salt
1 tbsp oil Salt to taste
For Seasoning
1 tbsp oil
1 tsp mustard seeds¼ tsp asafoetida
For Garnishing
2 tbsp coriander leaves, finely chopped¼ cup freshly grated coconut
Preparation
Pre-heat the oven for 10-15 minutes at 200 c
Mix gram flour, salt, baking powder, turmeric powder and sugar
Add butter milk, green chilli paste and ginger paste, and mix to a smooth paste
Lastly add Eno fruit salt
Pour the batter into the muffin cups and bake for 20-25 minutes
Allow it to cool for some time
Pour some sugar syrup over the dhoklas
Heat oil and splutter the mustard seeds for seasoning, and pour over the dhoklas
Garnish with grated coconuts and chopped coriander leavesBaked dhoklas muffins are ready to serve
For Sugar syrup
Boil ¼ cup of water with 2 tbsp sugar
