Rasmalai is basically chenna or cottage cheese dipped in rabri. The malai discs are made using curdled milk. Anyway, you can minimize the effort by using white bread and condensed milk to make rich and creamy malai.

Ingredients
6 slices of white bread
3 cups of milk
1/4 cup condensed milk
1/4 cup fresh cream
1 tbsp sliced almonds
1 tbsp chopped pistachios
1/4 tsp cardamom powder
A pinch of saffron
Preparation
Cut the bread slices into round discs, without the crust
Sprinkle milk over the discs and keep them in refrigerator
Soak saffron in 1/4 cup hot milk, keep aside
Bring the milk to a boil
Reduce the heat and keep stirring for 10 minutes
Add condensed milk and fresh cream, mix well
Cook for 2 minutes on simmer
Add cardamom powder and mix well
Finally, turn off the stove and add saffron soaked milk
Refrigerate the milk for 30 minutes
Pour the milk over the bread discs
Garnish with almonds and pistachios
Keep the rasmalai refrigerated and serve chilled
