Kerala banana chips with a spicy makeover

Ingredients
3-4 raw bananas
1 cup coconut oil (for frying)
2 tsp salt (dissolved in water)
1 tsp chilli powder (adjust to taste)
4-5 garlic cloves (crushed)
A handful of curry leaves

Preparation
Peel the raw bananas and slice them thinly using a mandolin or a sharp knife
Heat coconut oil in a deep wok over medium heat
Once the oil is hot, add the banana slices in small batches
While frying, sprinkle a little salt water over the chips for flavour
Stir and flip the chips until they turn bright yellow and crispy
Remove the chips from the oil and place them on a paper towel to drain the excess oil.
Sprinkle the freshly fried chips with chilli powder while they're still hot
In the same oil, add the crushed garlic and curry leaves
Fry until the garlic turns light brown and the curry leaves become crisp
Scoop them out and let them drain on a paper towel
Toss the fried garlic and curry leaves with the banana chips
Serve your spicy Kerala banana chips as a perfect crunchy snack!
