Ingredients
4 medium-sized apples, peeled, cored, and diced
1 medium onion, finely chopped
1/2 cup brown sugar
1/2 cup apple cider vinegar
1/2 cup raisins
1 tsp mustard seeds
1 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp red chilli flakes (optional, adjust to taste)
Salt to taste
1 tbsp vegetable oil
Preparation
Heat the vegetable oil in a saucepan over medium heat
Add the mustard seeds and let them splutter
Add the chopped onion and sauté until translucent
Add the diced apples and cook for about 5-7 minutes until they begin to soften
Stir in the brown sugar, apple cider vinegar, raisins, ground ginger, ground cinnamon, ground cloves, red chilli flakes (if using), and salt
Bring the mixture to a simmer, then reduce the heat to low and let it cook gently for about 30-40 minutes, stirring occasionally, until the chutney thickens and the flavours meld together
Add a splash of water if the chutney becomes too thick
Once the chutney reaches your desired consistency and the apples are tender, taste and adjust the seasoning if needed
Remove the chutney from the heat and let it cool completely
Transfer the cooled chutney to sterilized jars and store them in the refrigerator
