This vegan eggs Benedict recipe offers all the flavour and indulgence of the classic dish, without the need for eggs or dairy. It's perfect for a special weekend brunch or any time you're craving a decadent breakfast treat!
Ingredients
For the vegan Hollandaise sauce:
1 cup raw cashews, soaked in hot water for 1 hour
1/4 cup nutritional yeast
1 tbsp lemon juice
1 tsp Dijon mustard
1/2 tsp turmeric (for colour)
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1/2-3/4 cup water (adjust for desired consistency)
For the vegan eggs:
1 block firm tofu, drained and pressed
2 tbsps nutritional yeast
1 tbsp olive oil
1 tbsp lemon juice
1/2 tsp turmeric (for colour)
Salt and pepper to taste
For serving:
English muffins, toasted
Sautéed spinach or steamed asparagus
Vegan bacon or smoked tofu slices (optional)
Chopped fresh chives or parsley for garnish
Preparation
Vegan Hollandaise sauce
Drain the soaked cashews and add them to a blender along with nutritional yeast, lemon juice, Dijon mustard, turmeric, garlic powder, onion powder, salt, pepper, and water
Blend until smooth and creamy, adding more water if needed to reach your desired consistency Taste and adjust seasoning as necessary
Transfer the sauce to a small saucepan and warm over low heat while you prepare the rest of the dish, stirring occasionally
