The spicy, dry chicken chukka is a South Indian dish richly marinated with numerous spices. It is also served in a semi-dry consistency. Did you know that 'chukka' means dry in Tamil and this dish can be enjoyed as a snack too? Chicken chukka also has many regional variations. Here's an easy recipe to prepare it.
Ingredients
300 gms small pieces of chicken
80 ml coconut oil
15 gms whole peppercorns
5 gms chopped garlic
5 gms chopped ginger
30 gms sliced onions
20 gms sliced tomatoes
Salt to taste
2 gms turmeric powder
10 gms Kashmiri chilly powder
3 gms garam masala powder
4 gms fennel powder
15 gms tomato ketchup
1 sprig of curry leaves
10 ml lemon juice
3 gms chopped coriander
For garnish
Fried whole shallots
Microgreens
Green chilly slices
Fried grated coconut
Preparation
Heat coconut oil in a pan, add peppercorns, chopped ginger, garlic, and sliced onions
Sauté until they turn transparent and add tomato slices Add all the seasonings
Cook in slow heat until tomatoes get mashed
Add the small chicken pieces and cook for 10 to 15 minutes on slow heat
Once the chicken gets cooked, add the tomato ketchup and stir fry for 2 minutes on high flame
Add lemon juice and finish with chopped coriander leaves and curry leaves
Arrange in a plate and garnish
