Overripe banana – ragi snack bursts with nutrition and flavours

Bananas turn black in colour when they are overripe. Many don’t like them, but wait if you are about to throw them away. You can combine them with ragi (finger millet) powder to make a tasty and nutritious snack that children will simply love to munch on. Here’s the easy recipe:

Ingredients
3 overripe black bananas
1 tbsp ghee
1 tbsp cashew nuts
½ cup ragi (finger millet) powder
3 cubes of jaggery
¼ cup water
1 cup grated coconut
¾ teaspoon cardamom powder
1 pinch salt

Preparation
Pour ghee into a frying pan
Add in cashew nuts, banana slices, ragi powder, and saute the mix well
Add grated coconut and saute them again
When the mix becomes nice and soft and starts to release a sweet aroma, pour the melted jaggery (after removing impurities using a sieve) into it
Saute the mix again till it becomes tender and blends nicely
Put the mix in another vessel, add cardamom powder
Take small portions of the mixture and roll them into bite-sized balls
Flatten them a bit
Now pour ghee into the hot pan and put the sweet balls into it
Flip sides a couple of times at regular intervals
The delicious snack is ready to be served
