Christmas is the time to make and taste a wide variety of wines. While some wines need several weeks to be ready, others can be served within a few days. Here is the recipe to prepare a wine from Indian coffee plum aka lololikka. It is a popular sour fruit that's grown in Kerala homes. Moreover, you can serve this excellent wine within five days.
Ingredients
2 kg of Indian coffee plum (lololikka)
1 ½ kg of brown sugar / sugar
One fistful each of cardamom, cloves, cinnamon, and star anise
2 litres of water
Preparation
Wash coffee plum and wipe them dry
Heat a pan with water and add brown sugar, cardamom, cloves, cinnamon and star anise
Boil the contents in the pan to enable the taste of the spices to blend with the water
Once the water boils well, add the coffee plum to it
Slightly mash the boiled coffee plum with a moisture-less spoon
Once the water gets a red colour, switch off the flame
After the mix cools to room temperature, transfer it to glass bottles, leaving enough space at its top for the wine to ferment
After five days, sieve the wine and it can be preserved for a long time
