This delicious laddu can be made with aval aka poha or flattened rice, filled with healthy fats, fibre, protein, vitamins, minerals and more. Here's the recipe:
Ingredients
200 gms flattened rice
300 gms jaggery
½ cup grated coconut
5 cardamom pods
1 small piece of dried ginger
Preparation
Dry roast the flattened rice, cardamom pods and dried ginger in a thick-bottomed vessel on low flame
Stir continuously for 4 minutes or until the flattened rice turns crispy
Prepare jaggery syrup by melting jaggery in 1 cup water
Pass the jaggery syrup through a sieve
Boil the jaggery syrup again until it has one one-string consistency
Grind the crispy flattened rice after it has cooled down
Add grated coconut and grind again
Transfer the flattened rice-coconut powder to another bowl
Pour warm jaggery syrup slowly and mix well
Keep on adding the jaggery syrup until the mixture turns thick
Now make small balls and roll them between your palms to make laddoos
