Rasam, the delicious, spicy soup-like dish, paired with steaming hot rice makes a yummy South Indian meal. It has got some medical benefits too, especially as it aids in digestion. The key ingredients of the traditional recipe are tamarind, tomato, pepper, garlic, and asafoetida. Perked up with pepper, it's often spicy and tangy in flavour, but for those who like it a bit less hot, try making paal rasam (milk rasam). Ingredients
4 tomatoes (finely chopped)
Salt (as required)
2 cups of water
1 teaspoon ghee
mustard (as required)
coriander leaves (as required)
For making the powder
oil (as required)
1 teaspoon lentil (uzhunnu)
2 dry red chilli
½ teaspoon pepper
½ teaspoon cumin seeds
¼ teaspoon asafoetida
Preparation
Heat oil in a pan and add the ingredients for making the powder
Heat them lightly for some time, and grind them together into fine powder form using a mixer
Keep it aside
Boil tomato with salt in 2 cups of water and mesh well
Add in the powder and boil for another five minutes
Add one cup of milk and let it boil on medium flame
Add coriander leaves
The spicy, delicious hot milk rasam is ready to be served
