Ever heard of a yellow-coloured dessert pet named 'love letter' that kids love? The traditional Malabari snack 'elanchi,' prepared with simple ingredients and topped with cashews, dried grapes and more, can impress adults too, especially with tea in the afternoon. Here's how to prepare the yummy snack.

Ingredients
1 cup maida (refined flour)
1 cup water
1 egg
¼ teaspoon salt
¼ teaspoon yellow turmeric powder
1 teaspoon ghee
10 numbers of cashew nuts
1 teaspoon dried grapes
1 cup grated coconut
¼ cup sugar
2 numbers of cardamoms

Preparation
Heat the ghee in a pan
Add the cashew nuts and dried grapes and roast them in the ghee
Add the coconut and sauté for two to four minutes on medium flame
Next, add cardamom and sugar and continue stirring until the sugar melts
Switch off the flame and remove the pan
The filling is ready
Blend maida, water, egg, salt and yellow turmeric powder in a mixer so that they turn into a batter which is not thick
Heat a pan and spread the batter over it thinly with a small ladle in the shape of a ‘dosa’
Cook for 30 seconds
Both sides could be cooked
Adjust the flame between low and medium
When the ‘dosa’ is cooked, place a full spoon of the coconut mixture prepared earlier on it
Roll the ‘dosa’
The tasty elanchi ‘love letter’ is ready
