The Malabar-style Mappila chicken fry, which can be easily prepared with easily available spices, has many takers in both the northern and southern parts of Kerala. It's a popular accompaniment to ghee rice. Here's the recipe for the yummy fried chicken.
Ingredients
300 gms chicken
15 gms Kashmiri chilly powder
4 gms yellow turmeric powder
20 ml lemon juice
5 gms pepper powder
10 gms maida (refined flour)
25 gms scraped coconut
Coconut oil for frying
Salt to taste
5 gms garam masala powder
10 gms ginger-garlic paste
5 gms curry leaves
Preparation
Wash chicken thoroughly and cut it into small pieces
Apply Kashmiri chilly powder, yellow turmeric powder, pepper powder, scraped coconut, maida, garam masala and ginger-garlic paste to the chicken pieces
Add enough salt and lemon juice as well
Marinate the pieces for 30 minutes
Now, pour coconut oil in a pan and heat it
Add the marinated chicken pieces to the pan and fry
Curry leaves also could be roasted in the pan
