Uzhunnu vada is undoubtedly one of the most popular teatime snacks in the southern part of India. Hot and crunchy vadas are even served as side dishes with dosas or idlis. In case you are bored of the same old uzhunnu vada, check out this sweet vada that could be enjoyed as a delicious dessert. Ingredients
2 ripe plantains (steamed and seeds removed)
½ cup grated coconut
1 tsp cardamom powder
1 tsp cumin seeds
A pinch of baking soda
4 tbsp sugar or jaggery
¼ cup wheat flour
Preparation
Mash the steamed plantains well
Into it add grated coconut, cardamom powder, cumin and baking soda
Add sugar/jaggery too
Mix well
Now add the wheat flour
Give everything a good mix
There is no need to add water as the steamed plantains are moist
Scoop a ball of this dough
Shape into vada and put a hole in the middle
Fry in hot coconut oil until they are crunchy and golden
Tasty sweet vada that can be enjoyed as an evening snack is ready.
