Deliciously spicy potato kara curry flavoured with sambar powder

Sambar, the popular South Indian dish, is loaded with veggies and dal. However, the iconic dish is cooked differently in various parts of the country.

From the simple vegetable sambar to the more flavoursome sambar made with roasted coconut base, it is cooked in myriad ways.

Kara curry is a simple potato dish that is mostly cooked for Namboothiri weddings, using homemade sambar powder. Here is how to make it at home.

Ingredients
1 tsp yellow split dal
2 tsp urad dal
1 tsp coriander seeds
½ tsp fenugreek seeds
6 red chillies
3 potatoes
2 tsp coconut oil
1 tsp mustard seeds
½ tsp cumin seeds
½ tsp turmeric powder
½ tsp chilli powder
Salt as required

Preparation
Boil the potatoes; it shouldn’t be fully cooked
Toast the yellow split dal, urad dal, coriander seeds and red chillies
Grind them into fine powder; this is the sambar powder
Heat coconut oil in a pan
Splutter mustard seeds and cumin
Into it add the boiled potatoes, turmeric powder, chili powder and salt
Cook with the lid on
Into it add the sambar powder
Mix well
Tasty potato kara curry is ready.
